Texas Hash is a great meal you can make for dinner when there's a large group eating and you're wanting something a little different. It smells great while cooking and really warms up their appetites. It's easy to vary the recipe and get your own favorite version. I have other versions where I add in things but this is the base version and usually the one that everyone likes (I like to add sauteed mushrooms which is NOT a big hit with the picky men in my family so when I do this, I put them all on one corner.)

Ingredients

  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 1 can stewed tomatoes
  • 3 Tablespoons chilli powder
  • 2 lbs ground beef
  • 1 or 2 large bell peppers, green or red or both
  • 8 oz spaghetti
  • 1.5 cup cheddar cheese, grated
  • 2 cloves garlic, (optional)
  • 1 tablespoon cooking oil, (olive oil preferred)
  1. Add 1 T of oil to skilled, add chopped onions, garlic and peppers- simmer/sautee until just soft. 3-4 minutes (don't wait until onions are carmelized) and set aside
  2. brown ground beef in other skilled so you can drain the grease without losing the juices of the onions and peppers
  3. add meat to onion pepper mixture, add chilli powder and stewed tomatoes (if you prefer fresh tomatoes then sautee them with the onions and here had 4-6 oz of tomato sauce to keep it a little soupy) cook, uncovered for 5 to 6 minutes.
  4. cook spagetti (or other noodles) for half of it's cooking time, if package says boil 6 minutes, then boil it 3 minutes. then drain and place in a casserole dish
  5. layer the beef mixture over the spaghetti and place in oven at 350 degrees for 10-15 minutes. The liquid from the meat will finish cooking the noodles. Then take it out, top it off with cheddar cheese and place back in oven for 3-5 minutes to melt the cheese. (sliced american cheese is an acceptable replacement)
  6. Serve and Eat
